Overcooking food takes away its nutrients and can even turn it carcinogenic (cancer causing).
Take bacon for instance: crunchy bacon is not as good for you as bacon that is cooked perfectly. The fat should be mostly rendered into oil, but without blackening the bacon.
Another example:
Scrambled eggs that are rubbery aren't as good for you as those where the white has just barely gone from clear to still.
Furthermore:
A steak cooked to "medium" is better for you than one that is "well done."
Vegetables that are mushy aren't as good for you as ones that are "al dente" (firm to the tooth).
Butter that is browned has turned on you and is now rancid.
Free yourself of these bad habits, which have been holding back your good health.
